INGREDIENTS:
Wheat Flour, Maize Flour, Wheat Gluten, Yeast Extract, Active dry Yeast, Salt, Milk Powder, Dextrose, Malt Wheat Flour, Emulsifier : Soya Lecithin

This bread mixes is the final results of the mixing of flours obtained by the grinding of high quality grains and milk.
PROFESSIONAL DIRECTIONS:
Recipe:
5 Kg Bread Mixes
3 Lt. warm water
Conventional:
Pour 3 Lt. of warm water and 5 Kg. of bread Mixes into the spiral mixer basin.
Knead for about 15' minutes (5' min. at I° speed and 10' min. at II° speed)
Let the dough rest for about 30' min.
Divide in pieces of about 270 gr. and give them the baguette shape.
Let rise for about 90' min.
Engrave the surface with a cutter.
Bake with steam at 220°/230° C. for about 20/25' min opening the steam valve after 10/15' min.
