The Maize was discovered by Colombo in the New World in 1492.
He brought it to the Spain and from where it will be spreaded all over Europe, Middle East, Africa, India and China.
The Maize has been immediately produced thanks to its better yield than the other grains.
In this bread mixes we use a special kind of Maize flour called "Fumetto" that permit to the bread to be lighter and tasty.

Recipe:
5 Kg Bread Mixes
3 Lt. warm water
Conventional:
Pour 3 Lt. of warm water and 5 Kg. of bread Mixes into the spiral mixer basin.
Knead for about 15' minutes (5' min. at I° speed and 10' min. at II° speed)
Put the dough in a table covered with flour and shape a tongue of dough of about 3 cm. of thickness.
Cut the dough in square pieces of about 10 cm. per side
Let rise for about 90' min.
Engrave the surface.
Bake with steam at 220°/230° C. for about 20/25' min opening the steam valve after 10/15' min.
