INGREDIENTS:
Durum Wheat Semola, Durum Wheat Flour, Wheat Gluten, Yeast Extract, Active dry Yeast, Salt, Dextrose, Malt Wheat Flour, Emulsifier : Soya Lecithin
Features:
From the ancient "Pugliese" tradition born this tipical durum wheat semola bread.
Different from the wheat flour bread for its granularity and it's dark yellow colour, with higher protein content.
PROFESSIONAL DIRECTIONS:
Recipe:
5 Kg Bread Mixes
3,4 Lt. warm water
Conventional:
Pour 3,4 Lt. of warm water and 5 Kg. of bread Mixes into the spiral mixer basin.
Knead for about 15' minutes (5' min. at I° speed and 10' min. at II° speed)
Let the dough rest for about 40' min.
Divide in pieces of about 1,5 Kg.
Let rise for about 90' min.
Engrave the surface with a cutter.
Bake with steam at 230° C. for about 40' min opening the steam valve after 20' min.
